    "For 30 days this honey-hued beer sleeps in hand selected oak barrels, locked inside a bonded warehouse, gradually assimilating the subtle flavours that reside in the wood. Barrels are then emptied and maturation continues for a further 47 days in a marrying tun where these natural flavours infuse and fall into perfect balance. This 77-day process is unique and produces a delicious, refreshing beer: Aromas of vanilla and toffee, hints of citrus, with a malty, lightly oaked,palate. Deftly balanced and light in texture, soothing and warming in the finish."

    “Samichlaus” beer is brewed once a year, in each case on December 6th, and stored and matured afterwards for over 10 months before it is bottled. "Samichlaus” beer can mature for many years in the bottle; older vintages obtain a complexity and receive their creamy warm aftertaste. This beer can be served with heavy meals and desserts, particularly with chocolate - or as digestive and meditations drink. According to the Guinness Book of Records, it is the strongest lager beer in the world with 14 % alcohol and 32 degrees original extract content. It is brewed exclusively of natural raw ingredients after the purity requirement of 1516.

     

     Founders Old Curmudgeon Ale

     9.8% alcohol by volume.
     This Curmudgeon may as well be Poseidon himself because this potent brew brings the full wrath of the seven seas in each and every sip. It starts with a powerful, malty smell that reminds me of 10 year old Balvenie with a hint of strong sea air. Some say bourbon, but it might depend on which you drink. It pours a deep, translucent red with nearly no head. The first taste was an eye opener. Again, I got a taste that reminded me of a salty-sweet, seaworthy, scotch with a stern, burning in the back of my throat. At 9.3% ABV it is no wonder. There is a sweet, dried date flavor that is delicious. This is a scotch drinker’s ale and a good one at that. This is serious ale for serious drinkers.

    The Nose
    There are obvious caramel, maple syrup and brown sugar notes (the Founders Web site refers to molasses). There are also some hints of oak and a slightly hoppy, crisp edge to the nose.  You can smell that it has a higher ABV and it smells like it will be a good heavy beer.

    The Taste
    This is one thick, full-bodied, heavy beer. Oak, molasses and caramel notes mingle with hints of smoke, but with a floral hoppiness to balance it all out and to cleanse the palate.  It is this hoppy undertone, that also lingers on the finish, that keeps this from being a cloying, syrupy beer.  The higher ABV is noticeable not just on the finish, where warm vapors fill your mouth as you swallow, but also on the palate.  The alcohol gives it a character akin to a smooth, lower alcohol whiskey.  As the beer warms, the finish becomes a oaky, smoky and hoppy experience, and very subtle sour cherry notes make an occasional cameo.

    Aecht Schlenkerla Rauchbier Maerzen

    Michael Jackson **** World Classic [Pocket Guide to Beer, pp. 64, 65]:

    Aecht Schlenkerla Rauchbier Maerzen is unpasteurized and made entirely from smoked malt. Heller Trum is one of the very few breweries left in Germany that does its own malting. During germination of barley, the smoke of beech wood fire is "forced" through the germinating barley for a total of between twenty four hours and thirty six hours at varying temperatures. Therefore, Aecht Schlenkerla Rauchbier gains an unusual smoky dryness from this process. In contrast, the standard drying procedure for malt is to be heated in a kiln. The brew is mashed by double decoction, hopped once, bottom fermented,and matured 7 weeks.

    Created and designed by Uerige Obergaerige Hausbrauerei for their very special customers in the USA only! Apart from being sold in the USA, this rarity can only be obtained at our STICKUM bar – that is, if we have it in store. This beer also has a guaranteed minimum storage period of four weeks, but true aficionados take this to be a mere suggestion – they swear by storing their DoppelSticke in the cellar for another whole year. But then...!

    Uerige DoppelSticke might just be "Germany's interpretation of the classic barley-wine style ", ie a third definition next to England's "malt-driven" concoction {such as JW Lees Vintage Harvest Ale} and America's "hop-heavy" version {such as Sierra Nevada's BigFoot}.

    The world-classic Duesseldorfer Altbier

    Reissdorf Koelsch

    The town of Cologne, the namesake for Koelsch, not only has more breweries than any other city in the world, but also has a federal law protecting its right to brew this pale, top-fermenting ale (appellation controlee). Koelsch, which has been brewed in Cologne and outlying areas since before 1300, furthermore has a brewers guild (founded in 1396) that mandates certain parameters for its brewing and protects the appellation worldwide.

    Koelsch is typically lighter even than Pilsner in color and is often around 5% ABV with a slightly malty, fairly soft palate. The finish is decidedly dry due to its high attenuation and firm hop character. The cleanness is a result of a fairly long, cold maturation of two to six weeks.

    These days Reissdorf Koelsch has almost reached a "cult status" with beer connoisseurs around the world looking at it as a "well preserved secret". Top fermentation lasts for about eight days with another four weeks of cold conditioning following. "Reissdorf Koelsch" is designed to be pale of color, soft on the palate, restrained on fruitiness, with a delicate dryness in the finish. "Reissdorf Koelsch" is a "session style" beer served in its typical 7 oz. glass in the wee-hours after work.

    Another tradition unique to this beer style is its method of serving. Small wooden casks brought up to the pub via dumb waiter and placed on the bar counter are gravity -dispensed into narrow, cylindrical glasses (20 cl) called " Stangen" to expedite the pouring of the beer as well as to reduce the waiting time for impatient guests.

    Waiters, called "Koebes", dressed traditionally in blue jackets or shirts and leather aprons, pick up as many as 12 beers at a time from the "Zappes" (the "tapper") which fit in recesses around the perimeter of a metal tray ( the "Kranz" or crown) with a central handle. Tabs are run by the Koebes making tick marks on the customers' coasters and Koelsch keeps coming without asking! Koebes are seldomly tipped, but will allow you to buy them a round which they usually finish in one swallow.

    The Brew 1 – March – “The Iron Tankard” Old Stock Ale – The building started as a YMCA in 1889 and had a huge iron swimming pool in the basement.
    From Spike: Iron Tankard “Old Stock Ale” is the first of four beers in Terrapin’s Georgia Theatre Sessions. It is brewed with a generous portion of crystal malts for a full body and is lightly hopped. This malt forward beer has flavors of dark dried fruit, mellow alcoholic warmth and is unfiltered for your listening pleasure.
    A portion of the proceeds will be donated to the Georgia Historic Trust for Historic Preservation Fund to rebuild the Georgia Theater. To make things even more interesting, there is one Golden Ticket hidden among each of the Georgia Theater Sessions brews. This means that four lucky winners will receive a lifetime pass to the new Theater.

          Inspiration can sometimes be found in the strangest of places. This eccentric brew started with a single flower from a hop named Hallertau. The delicate and spicy aroma present in this flower has been responsible for generations of great beers. Hallertau hops are to a brewer what an old tractor is to a farmer: reliable. Big Red expresses the nobility of Hallertau by placing it at the forefront of this Imperial Ale. Pour it into a snifter. A swirl allows the spicy aromas to come forward as a taste to the lips reveals the complex balance between sweet malts and the bitterness of hops. Big Red’s ability to please is as dependable as your grandpa’s old tractor, and just as powerful–so please don’t drink and drive.

          The hexagram talisman has been used around the world for centuries to invoke magic and good luck. The six–point star is also the customary symbol of the brewer, representing the essential aspects of purity: water, hops, grain, malt, yeast, and of course, the brewer. Wishes of good fortune often collaborate with the brewer’s creativity to yield dramatic results. We carefully chose the name for this Imperial India Black Ale, Iniquity – a word opposing goodness. Why? This beer is contrary to what one may expect from an IPA; this is an ale as black as night. It is the antithesis of Unearthly. Some may consider it an immoral act to blacken an ale. We suggest they don’t rely on conventional standards. Allow the darkness to consume you. Cheers!
